    Abstract/Description
    Los mercados de alimentos tradicionales colombianos, las "Galerías", son protagonistas del entorno alimentario de la ciudad. La asequibilidad, la accesibilidad, la conveniencia de la preparación y de los ingredientes en las Galerías desempeñan un papel importante en la elección de los alimentos, la dieta y, en consecuencia, la nutrición y la salud de las personas. Este es el caso de la Galería El Porvenir en Cali, Colombia. El flujo de alimentos y los perfiles del consumidor y el vendedor promedio se muestran en estos resultados de investigación.
