Fresh coconut water from young coconuts is said to be a future competitor to the commercially available sports drinks and pasteurised coconut drinks. FAOs Agricultural Industries and Post-harvest Management Services developed a cold sterilisation method, which is fast, cheap, and easy. Fresh coconut juice is delicious, but difficult to keep. The current pasteurisation methods cause loss of natural taste and healthy properties. In the new method, coconut water is filtered through a medium like porcelain, which retains all microorganisms and renders the liquid sterile. The exact method will be made freely available once FAO receives the official patent, its first ever!
