    Fisheries all over the world are reaching levels of exploitation which are at or over the limit of their sustainable exploitation. For this reason there is a need to ensure that the fish which is caught reaches the eventual consumer with minimal losses. Decision-makers in government and industry, who are concerned about reducing wastage of harvested fish, will find in Post-harvest fisheries development a guide to handling, preservation, processing and quality, a layman's guide to all aspects of post-harvest fisheries science and technology.
