Fish manuals Fermented fish in Africa is a report based on surveys carried out in eight West African countries. the Sudan and Uganda to identify the various types of fermented fishery products, their processing characteristics and economic importance. Fermented fish processing is an artisinal activity and the processes used differ from one country to another. Three basic methods are identified in the report: fermentation with salting and drying; fermentation and drying without salting: and fermentation with salting but no drying. Fermented fish is used in Africa both as a condiment and as a food. These products contribute to protein intake of the people, particularly in the rural hinterland where fresh fish is not readily available. Curing by fermentation was found to be an important method of preservation because poor quality fish or unpopular species are usually processed in this way, which utilizes fish that would otherwise have been thrown away. In the light of the observations made some recommendations have been suggested in the book to improve quality in order to enhance intra-regional trade in fish and fishery products. Fermented fish in Africa A study on processing marketing and consumption by K M Essuman, 1992 80p FAO Fisheries Technical Paper No 329 ISBN 92 5 103255 6 Fish culture in undrainable ponds is a manual which describes the methods of freshwater fish culture for use in undrainable ponds, as practiced in India. It is primarily meant for extension workers and aquaculture training institutions. The systems of composite carp culture and composite carp culture-livestock farming are described. Methods of improvement of existing ponds and construction of new ponds have been included. Suitable species for culture. procurement of their seed and stocking ratios of various species under composite culture are discussed. Pond management, both pre-stocking and post-stocking, including fish health management and management of common hazards are also dealt with and the book contains information on marketing and economics of fish culture in undrainable ponds Fish culture in undrainable ponds A manual for extension by D Kumar 1992 239pp FAO Fisheries Technical Paper No 325 ISBN 92 5 103139 8 FAO Fisheries Department, FAO Via delle Terme di Caracalla 00100 Rome, ITALYen_US
